Here's what you'll need:

2 zucchini's
1 pound cooked chicken, diced
2 TBL flour
1/2 tsp salt
1/2 tsp black pepper
1 carrot, shredded
1 rib of celery, chopped
3/4 c. shredded cheddar cheese (divided)
1/4 c. blue cheese, crumbled (OPTIONAL)
3 TBL buffalo sauce
3 TBL blue cheese or ranch dressing

Preheat oven to 350.  Line a baking sheet with foil and spray with cooking oil.  Set aside.

Cut each zucchini in half horizontally.  Scoop out center, reserving 1/2 - diced up for filling. 

In a bowl, mix together chicken, flour, salt, pepper, carrot, celery, 1/2 c. shredded cheddar,
blue cheese crumbles (if using), buffalo sauce and dressing.

Place zucchini hollow side up on baking sheet.  Fill boats with filling until heaping.  Sprinkle with
remaining cheddar cheese.

Bake for 30 minutes or until zucchini achieves desired softness.
